Bio
Elisa Da Prato is an Italian-American chef, now based in Lucca Italy. Da Prato came to cooking by way of consciousness philosophy, having started a supper club and avant garde music series in her apartment in downtown Brooklyn. Since then she’s run two restaurants in Barga, Italia (her paternal hometown) and New York City as well as countless pop—ups and events. Having grown up in and around restaurants in both El Paso and Italia, she began her serious culinary research with a series of phone calls to her Nonna for recipes… combined with a very narrative cookery style and an interest in biodynamics, natural systems, and music yielded a cooking style and technique which draws upon Tuscan tradition, Ancient Roman texts and her lexicon of homemade botanical powders, dusts and ferments. She has just launched a Substack, The Rose Syndicate and is working on a laboratory, workshop, and botanical Atelier in Lucca.
